    i believe you could.
    same concept as veggie lasagne.

    i found out (after this batch was made) that the real way to finish the cannelloni is to give it a more moist topping. line them up on the dish side by side and run a layer of spinach on the top followed by a layer of cheese sauce. some top it with a meat sauce similar to a bolognese.

    but these were tasty as is.

    I have some mincemeat from an earlier meal in the fridge right now…wonder if it still good.

    Quincy, what about some alternative stuffings? Veggie style, for example.
